Application: Myoglobin is a protein that stores oxygen in mammalian muscles. It is particularly abundant in the muscles of diving mammals, which makes the muscles brown. Myoglobin is composed of a polypeptide chain and a heme prosthetic group, with a molecular weight of 16,700 and 153 amino acid residues. The subunits of myoglobin and hemoglobin have obvious homology in amino acid sequence, and their conformations and functions are also very similar. The molecular structure of myoglobin is dense and solid, and the amino acid residues containing hydrophilic group side chains are almost all on the outer surface of the molecule, which just binds to water molecules, making it a soluble protein.
