Fumaric acid is an important organic chemical raw material, an intermediate of fine chemical products, and an important derivative of maleic anhydride. It is widely used in food, coatings, resins, and plasticizers. In the food industry, fumaric acid is used as an acidulant and can be used in refreshing drinks, western wines, cold drinks, concentrated juices, canned fruits, pickles, and ice cream. It is used as an acidic substance for solid beverage gasifiers, with good bubble persistence and fine product texture.

Uses
1. Used as a mordant. It is used as an acidifier in the manufacture of unsaturated polyester resins, pesticides, acidulants and amino acids, etc. It is mostly used in combination with citric acid. It can be used in wet dough products and fruit juice drinks, with a maximum usage of 0.6g/kg; it can also be used in carbonated beverages, with a maximum usage of 0.3g/kg.
2. Fumaric acid is used to produce unsaturated polyester resins. This type of resin is characterized by good chemical corrosion resistance and heat resistance; the copolymer of fumaric acid and vinyl acetate is a good adhesive, and the copolymer with styrene is the raw material for manufacturing fiberglass. The plasticizer made from fumaric acid is non-toxic and can be used for vinyl acetate latex that comes into contact with food. This product is an intermediate of fine chemicals such as medicine and optical bleach. It is used in the production of dithiothiobutanedioic acid, an antidote, in the pharmaceutical industry. Fumaric acid is neutralized with sodium carbonate to obtain sodium fumarate ([17013-01-3]), which is then replaced with ferrous sulfate to obtain ferric fumarate, a drug for the treatment of microcytic anemia. This product is used as a food additive – an acidulant, for refreshing drinks, fruit candies, jellies, ice cream, etc. It is mostly used in combination with the acidulant citric acid. The monosodium salt made by the reaction of fumaric acid and sodium hydroxide is also used as an acid condiment and an intermediate for synthetic resins and mordants.
3. Food acidulant, important for antibacterial and anticorrosive; acidity regulator, acidulant, anti-thermal oxidation aid, pickling accelerator, spice. When used as an acidic substance in solid beverage gasifier, the bubbles are long-lasting and delicate; fine chemical intermediates such as medicine and optical bleaching agent. Used in the production of sodium dithiosuccinate, an antidote, and iron-rich blood for the treatment of microcytic anemia. Also used in the production of unsaturated polyester resin. Uses: Standard lye. Separation of thorium from cerium, lanthanum, praseodymium and rubidium. Synthetic resin. Mordant. Antioxidant.
