DL-Tartaric acid
Overview
DL-tartaric acid is also known as 2,3-dihydroxysuccinic acid, with the molecular formula: C4H6O6nH2O (crystalline product: n=1, anhydrous product n=0), and it appears as colorless crystals or white crystalline powder, odorless, and sour. It is a mixture of equal amounts of right-handed and left-handed tartaric acid, often containing one or two crystal waters, and loses water when heated to 100°C. It is stable in air, with a density of 1.Chemicalbook697, a solubility of 20.6 in water (20°C), about 1% in ether, and 5.01 in ethanol (25°C). It is widely used in the food industry, such as as a beer foaming agent, food acidifier, flavoring agent, used in refreshing drinks, candies, fruit juices, sauces, cold dishes, baking powder, etc. Its sourness is 1.3 times that of citric acid, and it is particularly suitable as a grape juice acidifier.
Uses
DL-Tartaric acid can be used as an acidulant, chelating agent, antioxidant enhancer, flavor enhancer, quick-acting leavening agent, acidic substance, food coloring diluent, and curing agent. DL-Tartaric acid is widely used in food, medicine, chemical book, light industry and other industries. It is mainly used to manufacture tartaric acid salts. In the food industry, it is used as a beer foaming agent, food acidulant, flavoring agent, and grape juice acidulant. It is also used in tanning, photography, glass, enamel, telecommunications equipment, etc.
