Lipase is widely used in industrial production. For example, in the food industry, lipase is used for meat defatting, flour improvement, oil modification, cheese processing, wine making and sauce processing. In the feed industry, lipase is compounded with other carbohydrate degrading enzymes to form a composite enzyme as a feed additive, which can effectively improve feed utilization. Lipase is also widely used in the biodecomposition of chiral compounds in the pharmaceutical and fine chemical industries. In the papermaking industry, lipase can achieve enzymatic removal of rosin in wood pulp. In the biodiesel industry, lipase can be used to catalyze the transesterification reaction of oils and chain-breaking alcohols for enzymatic synthesis of biodiesel. Lipase is also widely used in the washing industry, leather processing and textile industries.
